first time growing haldi, want to know boiling and drying steps for bright colour

Cure turmeric by boiling fresh rhizomes in water until soft and the typical smell comes, usually 45 to 90 minutes, then sun dry for 10 to 15 days. Boiling fixes the colour, reduces drying time and removes the raw smell. Cover the rhizomes at night and on rainy days. After drying to about 8 to 10 percent moisture, polish by rubbing in a drum or rotating barrel to remove the rough outer skin and give a smooth bright finish. Do not over boil as it dulls the colour, and do not under boil as the centre stays hard. Properly cured and polished haldi gets a better grade and price in the mandi.
One tip, boil in lots of small batches so each one cooks evenly. I once boiled too much at a time and the bottom got mushy and top stayed hard. Polishing in a hand drum is cheap if you do not have a machine.
We add nothing to the boiling water, just plain water. Some people add a pinch of stuff to brighten colour but the export buyers reject adulterated lots, so keep it natural and clean.
