Garlic can be profitable but prices swing a lot year to year, so plan for storage. With a good variety like Yamuna Safed 3 and proper management, yields of 50 to 80 quintals per acre of cured bulbs are achievable in good fields. The main costs are seed cloves, which are heavy at about 200 to 250 kg per acre, plus labour for planting and harvest. Profit depends almost entirely on the selling price, which can crash in a glut year and spike the next, so curing and storing your crop well lets you sell when rates improve. Get bold cloves graded and sell seed grade bulbs separately as they fetch more. Confirm current local rates before deciding, do not rely on last season prices.

Garlic made me good money one year and almost nothing the next. The trick is a dry airy store so you can hold the crop for two or three months and sell on a rate spike instead of dumping at harvest.

Seed cost is the big one. I keep my own seed bulbs from the best plot every year, that cuts a huge expense. Just store them well so they do not sprout or rot.

Be careful with anyone offering a guaranteed buyback contract for garlic at a fixed attractive rate before sowing. A relative signed one and when the open market rate fell the company found reasons to reject his grade. Keep your selling options open and do not pay big advances for such deals.
