The number one problem in microgreens is mould and damping off, caused by overcrowding, overwatering, poor airflow and dirty trays, which can ruin a tray overnight. Fixes are hygiene, the right seeding density, bottom watering rather than wetting the canopy, and good ventilation. Uneven germination, leggy weak growth from poor light, and short shelf life are the other common issues, handled by good seed, adequate light and harvesting and delivering fresh. Because they are eaten raw, food safety and clean water matter throughout. Since there is little chemical use here, the answer is mostly clean technique; confirm any food-safety requirements with local authorities.

Mould wiped out trays for me until I cut my seeding density and switched to watering from the bottom. Good airflow and clean trays between batches solved the rest.
