Microgreens are grown densely in shallow trays on a thin growing medium (or sometimes coir or mats), indoors on racks with good light, ventilation and clean water, and harvested with scissors at the first true-leaf stage. To start commercially you need clean trays and racks, a reliable seed source, a hygienic room to prevent mould, and a plan for steady delivery since they do not store. Hygiene is everything because mould and damping off ruin trays fast. Begin with easy, popular types and a few buyers, then expand. Keep your seed bills and grow records, and confirm food-safety and any FSSAI requirements for selling, plus local guidance, before scaling.

Cleanliness and airflow stopped my mould problems. I sanitise trays between batches and never overcrowd the room, that single change saved more trays than anything else.
