My Banganapalli looks firm and good outside but on cutting some have brown soft areas around the stone, and a few seeds have started sprouting inside the fruit. What is going on?
Two separate issues are likely. Internal brown soft tissue near the stone in Banganapalli points to an internal breakdown disorder linked to over-maturity at harvest, high temperature, and calcium and boron imbalance, similar in cause to spongy tissue in Alphonso. The seed sprouting inside the fruit is stone weevil or simply premature seed germination (vivipary) seen when fruit over-matures on the tree in hot wet conditions. To reduce both, harvest at correct mature-green stage rather than letting fruit hang too long, harvest in cooler hours and keep fruit out of direct sun, pre-cool before transport, and correct calcium and boron through soil test based fertilisation and recommended foliar sprays during fruit growth. If you find a grub or tunnel in the seed, that is stone weevil and needs orchard sanitation and recommended management. Maturity timing and temperature control are the main levers.
Harvesting on time instead of waiting for bigger size reduced my internal browning. Overripe fruit on the tree was the problem.
