Enoki is a niche premium product in India, so whether it is worth it depends entirely on whether you can reach the right buyers and cover the cost of cold growing. Demand exists in premium supermarkets, speciality grocers, hotels, and Asian and continental restaurants in larger cities, and the price is usually higher than common mushrooms, but the volume is limited and the buyers are concentrated in metro areas. Against that you must set the real cost of a cooled, controlled, sterile setup, which is significant. For most growers in the plains the cooling cost is the deciding factor. I would not quote a fixed income because both the price and the achievable demand vary a lot. The sensible approach is to confirm specific premium buyers and the volume they will take and the price they will pay before you invest in cooling.
