Arugula is usually direct sown in close rows or broadcast in beds, since it grows fast and is harvested as baby leaf, not transplanted like head crops. Sow at intervals every week or two for continuous supply, keep the bed evenly moist, and cut the leaves young when they are tender and mild. Many growers cut and let it regrow once or twice before resowing. Keeping it fast and unstressed is what keeps the leaf mild. Confirm a good variety and exact spacing with your KVK or other growers, and keep your seed bill and tag.
I broadcast it in small beds and cut baby leaf with scissors. Successive sowing every week keeps a steady supply, one big sowing all matures at once and I cannot sell it fast enough.
