How should I harvest and pack cherries to reach distant premium markets?

Cherries spoil so fast. I want to send them to city markets and get good rates. How do I harvest, cool and pack them so they arrive in good condition?

Cherries are extremely perishable, so speed and cold are everything for premium distant sale. Harvest in the cool early morning, picking with the stalk intact (stem-on cherries keep far better and look premium), handling gently to avoid bruising. Move fruit out of the sun immediately and pre-cool it as fast as possible, ideally to near 0 to 2 degrees C with high humidity, because every hour of field heat shortens shelf life. Grade by size and colour, remove cracked, soft and stemless fruit, and pack in small ventilated punnets or trays inside cartons with cushioning to prevent bruising, then keep the cold chain unbroken to market. Air freight or refrigerated fast transport is usually needed for far markets given the short shelf life. Branding the origin (for example Kashmir cherry) and consistent grading lift the rate. The faster you cool and the colder you keep them, the higher the price you can command. Confirm current market rates before fixing a deal.

Air freight to metro markets gets me the best rate, the fruit arrives fresh. Good grading and small trays reduce bruising on the way.
