I usually just take the cash and leave. What papers or records should I always keep when I sell so I can prove the deal and avoid problems later?

Keep these every time. The gate entry or lot record if you sold at a mandi, the assaying or grade report showing your quality, the weighment slip showing net weight and tare, and the final sale slip or invoice showing the rate, quantity, all deductions and the net amount payable. If you sold on eNAM, keep the digital sale record and payment reference. If you sold to a trader or under a contract, keep a signed copy of the agreement or at least a written note of the rate and terms. These records are your proof if there is a payment delay, a weight dispute, or a quality argument, and they also help you compare across seasons and mandis to sell smarter. Make it a habit to never hand over produce without getting at least a sale slip. Confirm what slips your mandi issues so you know what to ask for.
Since I started keeping every slip, settling any dispute became easy. Earlier with no paper I just had to accept whatever the agent said.
