Why is shiitake harder to grow than oyster mushroom?

Everyone says shiitake is difficult. What exactly makes it harder than oyster, so I know what I am getting into?

Shiitake is harder than oyster for several reasons. First, the substrate blocks must be fully sterilised in an autoclave or pressure setup, not just hot water pasteurised, which needs more equipment and care. Second, colonisation is long, often six to twelve weeks, and the block must brown properly before it will fruit, so any contamination during that long wait can ruin a block. Third, it prefers cooler temperatures and benefits from a cold or water shock to trigger fruiting, which is extra technique. Fourth, the spawn and correct strain can be harder to source. All this means more cost, more time and more risk of failure than oyster. It rewards patience and good facilities, so most people start with oyster, learn hygiene and climate control, and only then attempt shiitake. Training from DMR Solan or an SAU is strongly advised.

The full sterilisation step was the big jump for me from oyster. Hot water was enough for oyster but shiitake blocks contaminated until I sorted out proper sterilising.
