Fresh thyme fetches a premium per kg because it is specialised, but the honest reality is that each buyer uses very little of it, so you cannot build a business on thyme alone. Price for clean fresh thyme delivered to a chef can sit in a wide premium band that varies by city, season and grade, so confirm live rates yourself rather than assuming a figure. The way to find buyers is to approach hotel and restaurant chefs, gourmet retail, salad and continental food companies, and quick-commerce gourmet suppliers in metros, but pitch thyme as one item in a culinary herb basket alongside basil, rosemary, oregano and mint, not as a standalone product. A chef will happily add a small thyme order if you are already delivering other herbs, but few will take a delivery just for a few hundred grams of thyme. So the route to buyers is: build a relationship as a multi-herb supplier, then thyme rides along on the same delivery. That keeps the per-kg premium worthwhile because the logistics are shared. Get the price list and grade agreed in writing with each buyer, and stagger your cutting so thyme is continuously available alongside your other herbs.
Nobody wanted a delivery just for thyme. Once I added it to my basil and rosemary delivery, the same chefs took thyme too. It only works as a basket item.
