Kale is grown from seed sold by private vegetable seed companies and specialist exotic-vegetable seed sellers, often online; keep the bill and tag. Common types are curly green kale, and some growers do red or other types for variety in a premium basket. Since buyers in the health-food channel may have a preference, pick the type your buyer wants, often curly green as the default. Seed is small and usually raised in trays before transplanting, like other cole crops. Confirm a variety that grows well locally with other exotic-vegetable growers or your KVK before buying in quantity.

I order kale seed online since local shops do not stock it. Curly green is what my cafe buyers recognise, so that is what I stick with.
