How do I prune and thin peach for good fruit size?

Peach fruits on one-year-old shoots, so it needs heavier annual pruning than apple to keep producing fresh fruiting wood and to avoid overcrowded, weak growth. Train young trees to an open-centre (vase) shape so light reaches the whole canopy. Each dormant season remove old, weak and crowded shoots and head back to encourage strong new fruiting wood; without this the tree fruits only on the outer edges and size suffers. Fruit thinning is essential for size: peach naturally sets far more fruit than it can size, so thin by hand soon after fruit set to leave roughly one fruit every 10 to 15 cm along the shoot, removing small, doubled and damaged fruit. Thinning seems wasteful but the remaining fruit grow much larger and sweeter and fetch a far better grade and price.
