This matters a lot, because the claim is settled for the crop on your policy, and a mismatch with the crop you actually sowed is a common reason for rejection. If you realise before the enrolment cut-off that you will sow a different crop, you can usually update or correct the insured crop within the window, through the bank or CSC that enrolled you, by submitting a revised sowing declaration. The accepted way to do this is to inform your bank or insurer in time and get the change recorded with proof of the actual crop sown. Two cautions. First, there is a deadline, often a few days before or around the cut-off, after which the crop on the policy is locked for the season. Second, if you simply sow something else and do nothing, the policy stays on the old crop and a claim can fail on crop mismatch. So the safe path is to report the change of crop promptly and keep the acknowledgement. Confirm the exact change-of-crop window and process for your state on the PMFBY portal or with your bank.
