Amaranthus (chaulai) is a quick warm season crop grown two ways. As a leafy vegetable it can be sown almost year round in frost free areas, broadcasting or line sowing the very fine seed, and the first cutting comes in just a few weeks, with multiple cuttings of tender greens. As a grain crop it is grown mainly in the hills and some plains, sown in the kharif and harvested for the small nutritious grain when the heads mature, and grain amaranth is a promoted millet like health food. Prepare a fine seedbed since the seed is tiny, and sow shallow. It is hardy and needs few inputs. Confirm the recommended variety for your purpose, leafy or grain, and the window for your area with your KVK.
For leafy chaulai I sow small patches every couple of weeks for a steady supply, it cuts again and again. Very fine seed, so a smooth seedbed and shallow sowing. It is one of the easiest greens to grow.
The grain amaranth is a different crop, more in the hills, and the health food demand has lifted its rate. For the vegetable market the leafy type is what sells here in Pune.
