Palak grows best in cool weather, so the main season is October to February when growth is fast and leaves stay tender. You can also sow in late winter and early autumn, but in peak summer heat it bolts and turns bitter quickly. Sow in lines for easy weeding and cutting. Palak gives multiple cuttings, so the trick for continuous supply is staggered sowing every two to three weeks on small plots, and a light nitrogen top dressing and irrigation after each cutting to push the next flush. The first cutting comes within a few weeks of sowing. Confirm the recommended variety and exact timing for your area with the local horticulture office.

Staggered sowing is the key for steady market supply. I sow a new patch every two weeks so I always have tender leaf ready. A little urea and water after each cut and the next flush comes fast.

In summer my palak bolts and goes bitter, so I stick to the cool months for the good market crop and only do small summer patches under partial shade.
