want to grow enough veg for home use on my rooftop, which crops are easiest and most useful

For a family terrace garden the best crops are easy, productive vegetables and herbs that suit containers and give a steady kitchen supply. Good choices are leafy greens like spinach, methi, amaranth and coriander, plus tomato, chilli, brinjal, okra (bhindi), beans, and climbers like bottle gourd and bitter gourd trained on a trellis along the parapet. Herbs like mint, curry leaf and basil do very well in pots. Leafy greens and herbs are the quickest wins for a beginner because they are forgiving and give frequent harvests. Choose according to your sunlight, fruiting crops like tomato and gourds need 6 hours or more, while leafy greens manage with a little less. Use good compost-rich medium, ensure drainage, and rotate crops to keep pests down. Start with three or four easy crops you actually cook with, get confident, then add the trickier fruiting ones. Your local nursery can advise on varieties suited to your city's climate and season.
Bhindi, chilli and methi were my easiest starters. The gourds on the parapet trellis gave the most fun harvest. Leafy greens you can cut again and again.
