Mulethi roots and rhizomes are usually harvested after around 2 to 3 years, once they have grown long and thick enough to be worth digging. Because the roots go deep, harvesting means deep digging or ploughing to lift the whole root system without breaking and losing too much. After digging, the roots are cleaned, sometimes cut to size, and dried thoroughly until hard and storable. The long wait is the main drawback, so this crop ties up land and patience. Dry the roots fully to avoid fungus in storage. Confirm with your buyer the form they want, whether peeled or unpeeled, the size and the moisture, before processing your whole lot, and verify the buyer is genuine given the long investment.

Digging deep roots is hard labour. We lost some root to breakage. Loose soil makes the digging easier and saves more root.
