Pale dull turmeric usually comes from over boiling, drying in patchy shade, harvesting immature crop, or a low curcumin variety. Over boiling leaches colour, and slow uneven drying or moisture re entry during rains gives a faded mottled look. Cover the spread at night and during rain to stop reabsorption of moisture. Polishing after proper drying brings out the bright surface, so unpolished lots look duller. Variety matters too, since Erode and Salem locals differ in natural colour from IISR types. Get a curcumin test done at a recognised lab or through your KVK so you know if it is a process problem or a variety problem before next season.
Mine looked dull till I started polishing the dried fingers properly, the surface shine came up and the trader rate improved. Unpolished lots always look faded next to polished ones, the buyer eyes the surface first.
Check if you cooked it too long. The year my colour went pale was the year I over boiled to be safe, the colour had run into the water. Now I stop earlier and the dried fingers are brighter.
