Hill areas can grow late, snowball type cauliflower in the cool summer months and supply the plains when no cauliflower is available there, fetching a premium. Choose late maturing snowball varieties suited to cool weather, raise a healthy net protected nursery, and time transplanting so curds mature in the cooler season for that altitude. These late types need cool temperatures to form tight white curds and will fail or bolt if grown in heat. Tie outer leaves over the curd (blanching) to keep it white and protect from sun. Confirm the exact variety and transplanting window for your altitude with the local horticulture department or a hill KVK, since timing is very location specific.

In Shimla I grow late snowball cauliflower for the summer plains market and the timing for my altitude is everything. A week wrong and the curd either does not form or it bolts.

A tip that keeps my curds white and sells better: tie the outer leaves over the curd once it starts forming. Sun exposed curds turn yellowish and the buyer pays less.

A caution from my hill plot: do not try these late snowball types in any warmth, they bolt or give loose curds. They need real cool weather to form a tight white head.

The premium is real when the plains have no cauliflower. I plan my transplanting so the curds mature in our cool months and reach the plains mandi in their off season, that gap in supply is where the better rate comes from.
