Drying is a smart move for shiitake because dried shiitake stores for a long time, travels well, often fetches a good rate, and lets you reach the steady dried mushroom trade instead of depending on scarce fresh buyers. Harvest the caps at the right stage, clean off any debris, and dry them gently, either in a clean solar dryer or a low temperature mechanical dryer, starting at a lower heat and finishing a little warmer until they are crisp and snap cleanly, so they reach a safe low moisture for storage. Avoid drying in dust or direct open ground where they pick up dirt and spores. Once fully dry, store them in airtight, moisture proof packaging away from humidity, ideally with the cap quality and size graded, since whole, well shaped, clean dried caps command a better price. Good drying preserves aroma and colour, while poor or slow drying causes mould and off smell. Confirm safe final moisture and good practice with your KVK or DMR Solan, and check what form and grade your dried buyers want.
A simple solar dryer gave me much cleaner dried shiitake than drying in the open. Airtight packing after that kept it good for months while I found buyers.
