Cinnamon is managed by coppicing, you cut the plant low so it sends up many straight young shoots, and you harvest these shoots when they are the right thickness, usually after the bark peels easily in the rainy season. The skilled work is peeling, you scrape off the rough outer bark, slit the inner bark, loosen it and roll it into quills, then dry them in shade so they curl tightly into the familiar pipes. The thinner and more even the quill, the higher the grade. Broken bark and chips are sold as a lower grade or for oil. Good peeling takes practice and is the main labour cost, so this is a crop where processing skill, not just growing, decides your price.
Peeling is an art. The trained peelers in our area are in demand during season. Without good peeling even good bark sells cheap.
