Baby spinach is usually direct sown fairly densely in beds or rows and cut young when leaves are small and tender, before they get large or the plant bolts. Sow in succession every week or two for a steady supply, keep the soil evenly moist and fertile, and harvest by cutting the young leaves. Keeping growth fast and unstressed gives the soft mild leaf salad buyers want; stress and heat give tough bitter leaf. Use fresh seed of a variety suited to baby-leaf production and keep the bill and tag. Confirm a good variety and spacing with your KVK or other growers.
Sowing thick and cutting young is the trick for baby leaf. If I let it grow big it becomes more like regular palak and loses the premium.
