What age should onion seedlings be at transplanting and how do I plant them so they establish well and do not bolt?

Onion is transplanted from a nursery, and seedling age at transplanting matters a lot. Use seedlings of the right age, commonly around 6 to 8 weeks for rabi, since very old, overgrown seedlings increase bolting and doubles while too young seedlings are weak. Trim the tops slightly and you can dip roots in a recommended treatment before planting. Transplant into well prepared, levelled beds at close spacing such as about 15 cm rows and 10 cm plants, plant shallow so the bulb can develop at the surface, not deep, and irrigate immediately after transplanting to settle the seedlings. Keep the soil moist during establishment. Avoid transplanting overgrown seedlings in cool spells which triggers bolting. The exact seedling age, spacing and transplanting window depend on your season and variety, so confirm with your local KVK.
Planting shallow was important for me. When I set the seedlings too deep the bulbs stayed small and necks thick. Planting them shallow so the bulb forms at the surface gave bigger, better shaped bulbs.
Trimming the tops a little and watering immediately after transplanting helped my seedlings stand up and recover faster. Without the quick first irrigation they wilted and establishment was patchy. Keeping the soil moist for the first week settled them in well.
Do not let the nursery get overgrown before you plant it out. The year I delayed and transplanted old, thick seedlings into a cool spell, a lot of them bolted. Lifting them at the right age stopped most of that flowering.
Close spacing gave me a better marketable yield than wide gaps. When I planted too far apart the bulbs grew big but I got fewer per area and lost on total weight. Sticking to the recommended close spacing balanced bulb size with the number of bulbs.
Keeping the soil moist for the first week after transplanting settled my seedlings in. The first lot I let dry out after planting wilted and the stand came up patchy. Light, frequent watering through establishment got an even, vigorous field.
