It depends on the price gap and your drying capacity. Drying loses most of the weight since fresh ginger is mostly water, so the dry sonth rate per quintal must be much higher than the fresh rate to make up for it. Sonth has the advantage that it stores for a long time, so you can hold it and sell when prices improve instead of taking a fresh market crash. It also opens the spice and export trade. But drying needs clean space, dry weather and labour, and poorly dried lots get rejected. Compare the current fresh and sonth rates, account for the weight loss and drying cost, and ask your KVK or the Spices Board before deciding rather than assuming sonth always pays more.

The big plus of sonth is storage. Fresh ginger you must sell fast and the rate can crash. Dried, I can wait for a better rate. But you lose a lot of weight in drying, so do the maths on the price gap first.
