I want to plan production. Roughly how much fresh oyster mushroom do I get from each kg of dry straw, and over how many flushes?

For oyster mushroom, yield is usually quoted against dry substrate. With good straw, fresh spawn and proper humidity, growers commonly get fresh mushroom in the broad range of about 500 to 800 grams per kg of dry straw across two to three flushes, which is a biological efficiency of roughly 50 to 80 percent or sometimes more in well run units. The first flush is usually the biggest, with later flushes tapering off. Beginners often land at the lower end until they get humidity and contamination under control. Treat this as a planning range and confirm with local growers and your KVK, since species, substrate quality and climate all shift the result.
My first flush is always the heaviest, second is decent, third is small. I usually empty the bag after three flushes and put fresh ones. The spent straw goes to my compost pile.
