How are Shatavari roots processed and dried after harvest?

After digging, the roots are washed clean of soil, then the outer skin is removed and the central woody thread is often pulled out, leaving the white fleshy root, which is then dried thoroughly in shade and sun until crisp and storable without fungus. Buyers pay more for clean, well peeled, white, fully dry roots and reject material that is dark, damp or full of dirt. Peeling is labour heavy, so include that cost honestly in your budget. Dry the roots completely so they do not develop mould in storage, which causes rejection and weight loss. Before processing your whole lot, confirm with your buyer the exact grade, moisture and form they want, since requirements differ between Ayurvedic firms and traders.
