Fresh parsley has a steady but niche market in India, driven almost entirely by hotels, restaurants, catering, salad and ready-to-cook companies, and a smaller export demand. Two types sell: curly parsley (used as garnish) and flat leaf Italian parsley (used in cooking, often preferred by chefs). It is not a mandi commodity, so you sell to identified buyers, not to an open market. Price for clean bunched fresh parsley delivered to a buyer can sit somewhere in a wide band, often roughly Rs 60 to Rs 200 per kg depending on grade, season and city, but treat this only as indicative and confirm current rates yourself. The catch is that buyers want a reliable weekly quantity at a consistent grade, year round, in cold chain. Parsley is slower to germinate and slower growing than coriander, so plan your sowing in batches to keep continuous supply. Before you plant, lock in 2 or 3 buyers, agree grade and packing, and get the price and payment terms in writing. Without that, fresh parsley is hard to move because the general public buys very little of it.

Flat leaf moves better with chefs than curly in my experience. Curly is mostly garnish so volumes are small. I supply a catering company and they take flat leaf every week.

Germination took almost three weeks for me, I almost gave up thinking the seed was bad. Soak the seed and be patient.
