Baby corn can suit a small farmer near a city because it is a short crop, harvested young in roughly 50 to 70 days, and you can take multiple crops a year. Demand comes from hotels, restaurants, food processors who can and freeze it, supermarkets and exporters, so it is channel and contract driven rather than a general mandi item. A bonus is that the green plant after dehusking is good cattle fodder, adding value. Prices for dehusked cobs have ranged widely depending on buyer and grade. Tie up a buyer or processor first, since fresh baby corn is perishable and must move fast. Confirm rates and outlets locally.

Near Delhi I grow baby corn for a processor and also feed the green stalk to my buffaloes, so I get two benefits. Without the processor tie-up the cobs are too perishable to chase.

Short crop and I can fit it between main crops. The trick is picking at the right young stage every day, a day late and the cob is too big and rejected.
