Iceberg lettuce is almost entirely a contract and channel crop in India. The big buyers are burger and quick-service restaurant chains, hotels, sandwich and salad makers and modern retail, and much of the organised supply runs on tie-ups with these buyers. For an unconnected small farmer it is risky to grow on speculation because there is little open mandi demand. Prices are reasonable when you have a buyer, but heads are bulky and perishable. The honest advice is to grow iceberg only against a buyer tie-up or through an aggregator that supplies QSR chains, and confirm the arrangement and rate before planting.

Iceberg only worked for me once I had a tie-up with a salad supplier. Before that, trying to sell heads locally was a waste, no one wanted them.

Near Pune some growers do iceberg on contract for QSR chains. The chain wants exact head size and a cold chain, so it is not casual, it is a planned supply crop.
