My son does not want to do ordinary farm labour but is interested in agriculture. What skilled, better paying agri jobs can the youth aim for?

There are many skilled, respectable roles in agriculture beyond manual labour, and most pay better. A few directions worth looking at: farm machinery operator and mechanic (tractor, combine, transplanter), drone pilot for crop spraying which is a fast growing field with dedicated training and licensing, soil and water testing technician, plant nursery and protected cultivation (polyhouse) technician, dairy and livestock para vet or AI (artificial insemination) technician, fruit and vegetable grading, packing and cold chain work, agri input dealer or service provider, and farmer producer organisation (FPO) management roles. For training, look at ITIs, Krishi Vigyan Kendras (KVKs), the Agricultural Skill Council of India linked courses, state agriculture department programmes and recognised drone pilot training institutes. Many of these come with certificates that help in getting jobs or starting a small service business. Encourage him to pick one skill, get certified, and he can either take a job or serve farmers in your own area for income.
My nephew did a drone spraying course and now sprays for farmers across nearby villages on per acre rate. He earns well and is in demand every season.
