Cardamom is cured by drying fresh capsules at a controlled low temperature to retain the prized green colour, generally around 45 to 50 degrees Celsius in an improved drier. Harvest mature but not over ripe capsules, wash if muddy, and dry slowly, as high heat turns capsules yellow or brown and lowers the grade. In traditional flue pipe curing houses the warm air is circulated for many hours until the capsules are fully dry but still green. After curing, rub gently to remove stalks and dust, then grade by size and colour, since bold green capsules fetch the best price. Avoid sun drying for premium green grade as it bleaches the colour.

Low and slow is the rule. The first time I dried too hot the capsules went pale yellow and the auction price was poor. Now I keep the drier temperature down and the green holds.

Harvest at the right maturity, over ripe capsules split and dry badly. Pick at intervals as they mature. Good green bold elaichi gets a big premium at auction.
