I got my produce certified expecting better rates but the local mandi pays me the same as everyone else. How do I really get the organic premium people talk about?

This is the hard truth most people skip, certification does not create a premium, a buyer who values organic creates the premium. The general mandi does not pay extra for organic because it mixes your produce with everyone else's, so to actually earn more you must reach a buyer who specifically wants certified organic and is willing to pay for it. Practical routes are, sell direct to consumers through organic stores, weekend organic farmers markets, and home delivery in nearby towns, supply to organic aggregators, processors or exporters who need certified produce, sell through your FPO which can negotiate a bulk organic contract, and list on organic focused online marketplaces. Premiums are real for some crops and buyers but they are not guaranteed and they vary a lot by crop, quality, consistency of supply and how close you are to a city market. Before you scale up organic, find and confirm the buyer and the price first, because the certificate only opens the door, the buyer pays the premium. For high value niche crops like spices, the premium tends to be better than for bulk staples.
The mandi never paid me a paisa extra. The moment I started a small home delivery to families in Dehradun, I got 30 to 40 percent more. The buyer is everything, not the certificate.
Consistency matters. Organic buyers drop you if you cannot supply the same quality every week. I lost a store contract because I could not deliver steadily. Plan staggered planting so you always have produce.
Our FPO pooled everyone's organic produce and got one contract with a city retailer. Alone none of us had enough volume to interest them. Aggregation through the group got us the premium.
