Kale demand in India is small but growing, and it is firmly a city, health-food and channel crop. Buyers are health-conscious urban consumers through supermarkets and quick commerce, gyms and smoothie or salad outlets, cafes and some exporters. It is not a mandi crop and most rural buyers do not know it, so an unconnected farmer can struggle to sell volume. Prices can be good per bunch in the right city channel but the total market is limited and easily flooded. Grow kale on a small scale against a confirmed buyer or aggregator, test the demand before scaling, and confirm local outlets first.

I sell kale bunches to a couple of organic stores and a smoothie cafe in Bengaluru. Outside that small circle nobody asks for it, so I keep my area tiny.

Demand is real but thin. The few health-focused customers pay well, but if I grow too much it just does not sell, so I treat it as a small premium line.
