Post-harvest losses in India are often quoted at roughly 5 to 15 percent depending on the crop, and much higher for soft perishables, so this is real money you can save. Work backwards from the buyer. First, harvest at the right maturity and time of day; pick fruit and vegetables in the cool morning, not in afternoon heat. Second, handle gently. Most bruising happens from rough dumping, overfilled crates and dropping. Use crates instead of loose heaps for soft produce. Third, dry grain to safe moisture before storage, usually around 12 to 14 percent for most cereals; damp grain rots and attracts insects. Fourth, sort and remove damaged or diseased pieces fast, because one rotting fruit spoils the lot. Fifth, cool perishables quickly and store in shade or cold storage, and move them to market with the least delay. Sixth, keep storage clean and dry, control rats and insects, and stack so air can move. Each step is cheap on its own, and together they can cut losses sharply. Verify safe moisture and handling for your specific crop with your local agriculture office or KVK.
